Convection makes it possible to cook foods quicker. Steam makes it a hybrid, capable of getting a slow-cook finish. The result? Now you don’t have to sacrifice a golden finish or shiny, chewy crust for speed.

Here’s how it works. The advanced airflow system guarantees consistent cooking and baking, so you can bake every last cookie, crust and crumble to a golden finish without turning the product or moving the pan. Engage Baxter’s patented steam system, and you get ample, even steam. There is no flushing of the system required, thanks to the patented design. Combined with the oven’s Fan Delay feature, you can easily get artisan-quality crusts tray after tray.

Performance is just as impressive when it comes to actually using the oven. Digital controls are easy to read and use. Separate buttons make it easy to store and utilize up to 99 recipes. And the door latch design ensures that no matter how heavy the demand, heat won’t be lost through improperly sealed doors.

A true culinary tool.

The EpiconTM visual interface control is a true culinary tool. The Epicon control allows you to maximize the true potential of Baxter ovens by customizing and programming individual recipes using the control or a computer software system. By using the computer software system, operators can load recipes onto a USB drive and transfer directly to the oven.  

Two modes. It features two modes to create and save your recipes—manual and auto to fit the needs of   all operator skill levels. Epicon control panels intuitively guide users through modes to customize recipes or to preset recipes through a single knob to toggle between modes and recipes as well as adjust temperature, time and steam. Controls and recipes can be displayed in many languages (English, Spanish or French) to fit the operator's function. 

Saved recipes. The manual mode enables you to create and customize every portion of your recipe—temperature, time, airflow and steam injections throughout the baking or cooking process. If you are happy with the end results, simply save it into the recipe directory in order to repeat the results time after time. Saved recipes are accessed through the auto mode to enable any baker or chef to repeat the exact recipe by using the control or a computer software system. By using the computer software system, operators can load recipes onto a USB drive and transfer directly to the oven. This feature gives you peace of mind that every loaf of bread or pot roast is prepared the same way in order to deliver a consistent product that customers will come back for.

The Baxter Hybrid Convection Oven is ready for whatever the hungry hordes demand, capably handling whatever’s loaded on four 18"-by-26" sheet pans or three muffin pans. And because the “Quick Set” feature lets you program up to 99 recipes, you can effortlessly switch between potatoes and pastas,
chicken breasts and casseroles, or muffins and cakes.

For even greater versatility (and operator control), four different baking settings enable you to control the baking process. And you get all this from an oven that’s a mere 35" wide by 47.2" deep by 28" high. So you can install it in tight spaces back in the kitchen or at the front of the house.
