There's no cooking without heat. And there’s no better gas heat exchanger than the one from Baxter. We designed it to provide maximum, even heat transfer with a minimum of parts. We figure when your heat system works better, you do, too.
Baxter’s gas-fired heat exchanger provides maximum heat transfer distributed with incredible uniformity from the top to the bottom of the oven—a crucial element in the preparation of any artisan baked good.
The even heat generated by our heat exchanger is thanks to our U-shaped tubes. Unlike welded heat exchangers, our tubes are created through a unique bending process and assembled with a swedge-lock design. A turbulator within each tube helps equalize gentle flames to provide an even temperature throughout each tube.
What’s more, the tubes don’t exhibit the weak points common to welded heat exchangers and are less susceptible to the stresses of heating and cooling metal. In fact, we haven’t had a single reported tube failure since we introduced them in 1999.
The gentle heat transfer of Baxter’s heat exchanger system is thanks to an in-shot burner system. We don’t rely on a single power burner. Instead, a quick-start gas manifold transfers the gas into each in-shot burner, producing gentle flames of equal size in every tube. This provides consistent heat from top to bottom.
The in-shot burner system is also safe. A flame sensor constantly monitors the flame and an integrated draft inducer purges the system before each ignition.
As an added bonus, because there are no moving parts and no burner blower is required, the in-shot burner system also provides heat quietly.
